These are our family favorite and I can’t wait for you to give them a try 💘 Recipe below! #quickbites #justfeedme #justeat @JustFeedMe Cherry Cookies Ingredients 2 sticks of salted butter (1 cup) ⅔ cup sugar 2 eggs 2 tsp baking powder 3 ½ cups flour 2 tsp almond extract 1 (12 oz)jar maraschino cherries, juice drained and reserved For the Icing 2 cups powdered sugar 2 Tbsp melted butter 1 tsp almond extract 2 Tbsp Milk 2-4 Tbsp Reserved cherry juice, start with 2 tablespoons and add more to the desired consistency Instructions Drain the maraschino cherries, reserving the juice. Roughly chop the cherries and pat dry. Set aside. In a large mixing bowl, beat the butter and sugar until combined. Beat in eggs, almond extract, and chopped cherries. In a large bowl, whisk together flour and baking powder. Gradually add the flour mixture to the butter mixture, beating until just combined after each addition. Refrigerate for 2 hours. When you’re ready to bake, preheat the oven to 350F and line two baking sheets with parchment paper or silicone baking mats. Roll the dough into balls and arrange on the pans. Bake for 9-11 minutes or until the centers are set and the bottoms just begin to brown. The tops should still be light (no browning). Dip in the icing (recipe below) ICING: In a large bowl whisk together the powdered sugar, melted butter, milk, and extract. Add the reserved maraschino cherry juice and stir until smooth. Adjust with a little extra powdered sugar or cherry juice as needed until it’s a dip-able consistency.
