Chaliapin Steak Don 🥩🍚 from Food Wars! 👨🍳🍳 This video and recipe includes both versions of the dish from episode 6 and 7. I made the Episode 7 one. Both are delicious, have fun! Recipe Episode 6: - 2 thick cut sirloin or fillet steaks (200–250 g each) - 3 medium yellow onions - salt and black pepper - 1 tbsp unsalted butter - 1 tbsp beef fat or neutral oil - 300 g cooked Japanese short grain rice Instructions: Make cuts in a grid pattern on the steak meat, then pound it flat. Spread minced onions on both sides of the meat, then let it sit. Remove the onions and season the meat with salt and pepper. Cook the meat in butter, then sauté the onions in the juice until they caramelize. Sprinkle the cooked onions on top of the meat, and its done. Recipe Episode 7, additional steps: For the sauce: - 1 tbsp unsalted butter (15 g) - 75 ml red wine - 15 ml soy sauce - 15 ml water - 5 g cornstarch or potato starch Sear the meat in beef fat or oil on high heat for 2–3 minutes per side. Let it rest. Deglaze the same pan with red wine, soy sauce, and butter, sautée the onions in the sauce. Mix starch and water, add, and simmer until thick and glossy. Handmade pickled plum paste: - 2-3 umeboshi - a tiny drizzle of honey - pinch of sugar Remove the pits from the Umeboshi. Mash the flesh with a spoon or mortar until smooth. Add a touch of honey or sugar to mellow the sourness, but keep it minimal. Ready to use! Best fresh, but can keep in the fridge for 1–2 weeks. Mix rice with umeboshi. Add rice to the bowls. Slice the steak and place on top. Navy Curry 🍛 from One Piece 👨🍳🏴☠️🍳 Marinated Beef: -500g beef -1-2 tsp garlic -1 tsp ginger -1 tsp turmeric -50g greek yogurt -salt and pepper Marinate the beef first and let it rest in the fridge before cooking. Tomatoes: -5 tomatoes Slice an X in the tomatoes and boil for some seconds until the skin peels away. Remove the seeds and liquid. Caramelized Onion: -1 onion -1-2 tbsp oil Caramelize the onion by cooking on a medium heat with oil until softened, cook on low heat until they become brown. Roux: -60g fat, lard or bacon -60g all purpose flour -2-3 tbsp curry powder -1 tbsp garam masala Combine fat and flour, cook on medium heat until the color turns brown, stir frequently. After that add curry powder, garam masala, combine and remove from heat. Curry: -3-4 potatoes -2-3 carrots -water -dark roux -500ml chicken stock -tomatoes -caramelized Onions -marinated beef -1/2 grated apple -salt and pepper to season -potato starch to thicken if necessary Add potatoes and carrots in a pot, add enough water to cover. Set heat to medium-high. After everything is simmering add all other ingredients. After boiling, lower the heat to medium-low and cook until beef is tender. Remove foam and fat from the surface. Hikaru's Menchi Katsu from The Summer Hikaru Died Ingredients: Patties: - 250 g minced meat (50/50 beef/pork) - 1 medium onion, finely diced - 40 ml milk - 15 g panko (for the meat mixture) - 1 large egg (for the meat mixture) - 1/3 tsp salt - Pinch of black pepper - 1/3 tsp grated ginger (optional) Breading: - 40 g plain flour - 1 large egg, beaten (for coating) - 120-150 g panko (for coating) Frying: - Vegetable oil (enough for 7-8 cm depth in your pot) Instructions: Combine meat, onions, milk, 15g panko, 1 egg, salt, pepper, and ginger. Mix well. Divide into 4. Form 1.5-2 cm thick patties. Make thumb indentation. Chill 30-60 min. Dredge patties: flour > beaten egg > panko (press firmly). Heat oil to 170-175°C. Fry 2 patties at a time (4-6 min/side) until golden and cooked through. Place on wire rack.
