Creamy Chicken & Mushroom Alfredo Pasta 🧀🍄🟫 Ingredients: Chicken Seasoning: - 2 Chicken Breasts Cubed - 1tsp Salt - 1tsp Pepper - 1tbsp Mixed Herbs (oregano, thyme, rosemary) - 1tsp Parsley - 1tsp Cajun Seasoning - 0.5tsp Onion Powder - 1tbsp Oil Pasta Sauce: - 4 Garlic Cloves Minced - Whole Onion Diced - 200g Chestnut Mushrooms Sliced - 2tbsp Flour - 300ml Milk - 1tbsp Mixed Herbs - 100ml Cream - Parmesan - Fresh Parsley Recipe: - Season your chicken cubes and pan fry on medium heat for 10mins. Do not overcook it! - In the meantime prep your sauce base - Cut it open to check if it’s just about done and remove off the pan - Add butter to the pan, add your garlic onion and seasonings, sauté 5 mins - Add half your mushrooms and sauté for 7mins until softened (but not fully) - Add flour and mix it all, it will thick and dry. Cook the flour for a couple mins - Slowly add your milk. And keep mixing. It will naturally dissolve the flour and then thicken up, in the meantime bring your pasta water to a boil with some salt - Once all your milk mix has thickened, start cooking your pasta - Add your second half of mushrooms to the pan and Parmesan cheese (to your desire) - Once the pasta is boiled, add it to your sauce and some pasta water. White Chocolate Hazelnut & Kinder Cheesecake 🍫 Ingredients: Base: 200g Milk Chocolate Digestive Biscuits 50g Hazelnuts (blanched) 50g Salted Butter (melted) Cheesecake Filling: 330g Cream Cheese 200-250ml Double Cream 250g Mascarpone 250g Hazelnut Cream (any brand) 100g White Chocolate (melted) 50-60g (mock) Kinder Bars (Aldi / Lidl) (melted) 4tbsp Icing Sugar 1tsp Vanilla Hazelnut Ganache: 200g Hazelnut Paste / Cream 100ml Double Cream 50g White Chocolate 1tbsp Icing Sugar (optional) Topping: 100g Kinder Bars (melted) 30g White Chocolate Chopped Hazelnuts 100ml Double Cream 1tbsp Icing Sugar Recipe: - Crush your biscuits by hand to get a nice crumble - Roughly blend your hazelnuts and melt your salted butter. Add to the biscuits and melt - In a cake tin, line with butter and parchment paper along the edge and the base - Fill your base with biscuit (along the sides is optional), press firmly and chill in the fridge - In a bowl, whisk together your hazelnut cream, melted kinder bars, vanilla, icing sugar and double cream together - Do not over whisk your cream! It can split, mix at intervals to incorporate it all - Once whisked and thickened, fold in to it cream cheese and mascarpone - Fill in your cheesecake tin with the filling and chill for a couple of hours - over night - To make the hazelnut ganache, microwave half the cream and the rest of the ingredients together, mix until combined. - Then mix in the rest of your room temp cream until fully smooth - Layer this on top of the chilled cheesecake - For the chocolate layer. Let this go low and slow for a good 15mins, the mince will release its own fat / juices! - In the meantime prep your yoghurt feta sauce and wholewheat pasta - Once the beef is cooked. Either take all the mince out to make the paprika butter in that same pan. Sirloin Steak w/ Chimmi Churri 🌶️ Garlic & Mushroom Sauce, Garlic Roasted & Chive Mash and Steamed Green Beans 🔥 *Ramadan Repost* Ingredients (Serves 2): Chimmi Churri: 2tbsp Fresh Parsley 2tbsp Garlic 2/3tbsp Red Chilli 1-2tsp Fresh Oregano 1tsp Lemon Juice (or Vinegar) Salt & Pepper 3/4tbsp Olive Oil Mash Potato: 2 Large Potatoes 3 Cloves Roasted Garlic 2tsp Salt 2tsp Pepper 40g Butter 40ml Milk / Cream Handful of Chives Mushroom Sauce: 1tbsp Butter 200g Chestnut Mushrooms 2 Cloves Garlic 250ml Double Cream 1tsp Onion Powder Salt & Pepper Parsley Steak Seasoning: Sirloin Steak Salt & Pepper Pinch of Cajun 1tbsp Butter 3 Garlic Cloves (Stem of Rosemary) Steamed Green Beans Recipe: - Boil wash, peel and cut your potatoes into quarters and boil in boiling water (add 1bsp Salt) for 25 mins - Prep the Chimmi Churri by finely chopping the ingredients and adding salt and pepper, soak in olive oil and lemon juice and allow to sit - For the mash, peel some garlic and roast over the flame to char them, then chop them - Strain the potatoes and add the garlic and the rest of the ingredients and combine / roughly mash - Seive the mash for smoothness and mix with chives after - For the mushroom sauce: finely chop the mushrooms and garlic - Lightly season your steak and smash some garlic - On a skillet pan, bring the heat up with oil to a high heat (but not the max!) this will burn the steak - Once the pan is hot slowly add the steak and allow it to sear the side for 3 minutes - Flip the side and add smashed garlic and butter (and rosemary) - Tilt the pan and baste the steak with the butter continuously for 3/4 minutes - Take it off the pan and allow to rest for 5 mins!
