Stir until the sugar dissolves. * Cook the toffee: Continue to cook, without stirring, until the toffee reaches the hard-ball stage (around 250°F or 120°C). This can be tested by dropping a small amount of toffee into a glass of ice water. If it forms a hard ball, it is ready. * Add food colouring : Once the toffee reaches the desired temperature, remove the saucepan from the heat and stir in the red * Dip the apples: Carefully dip each apple into the toffee coating, turning to coat evenly.
